 Summer Squash Succotash

  • One small yellow squash
  • 2 tbsp red bell pepper finely chopped

  • 1 tbsp chopped fresh basil

  • Dash of pepper

  1. Cut the squash into quarters (length wise) and those into slices.

About 2\3 cup is 61 calories. :)

Great recipe, squash are in oversupply at this time of year and a succotash (goota love that word!) is cool and most for the summer heat.
